I’m sharing this recipe now because it is one of my go-to Thanksgiving side dishes. This baked cream corn casserole is a great option because it feeds a lot of people and doesn’t cost much either. In fact, you might not believe just how simple it is to make this easy corn casserole (also called Crock Pot corn pudding)! I think this recipe is just a bit easier. While it’s not exactly the same, using my slow cooker to make this baked corn casserole is definitely similar to what she used to make. She only made it around the holidays and there are so many memories attached to it. My mom used to make a baked creamed corn recipe when I was growing up that I loved. If you’ve never used your Crockpot around the holidays, it’s a game changer! You can use it for almost any part of your holiday meals, but it works wonders when it comes to recipes like side dishes and desserts! But sometimes it feels like there’s so much to do! So I depend on my slow cooker and easy recipes like our favorite Crock Pot Corn Casserole to help lighten the load a bit. It’s one of my favorite times to be in the kitchen. Bake in preheated oven for 45-50 minutes, until nice and golden brown and set in the center.When it comes to the holidays, I like cooking.In a mixing bowl, mix together the Jiffy corn muffin mix, the 15 oz can of whole kernel corn (drained), the 15 oz can of creamed corn, 1 cup of sour cream and 1 stick of butter (1/2 cup), melted.Then I simply move the pan around to spread the melted butter. (My favorite is the Pyrex glass square pan.) My preferred method to butter my dish is by placing a couple of tablespoons of butter in the pan and sticking in the warm oven to melt.
